But what a hamburger!

This is actually an offshoot of my quest for the perfect roesti, as the bun is to be replaced by potato pancakes.

Two medium potatoes are grated with a large-hole (7 mm; ca 1/4 inch) grater, and coated with a tablespoon of flour (shaking in a plastic bag is most convenient). Two round pancakes are formed in a hot cast-iron skillet wiped with oil, and the skillet is placed in a 400F oven for 25 minutes. The pancakes are then turned with a spatula and baked for another 25 minutes, or until well browned on both sides.

Meanwhile, some red onion and sliced mushrooms are sautéed in a little butter, then kept warm.

When the pancakes are done, a patty of freshly ground lamb is cooked to medium rare, salted and peppered to taste, and assembled into a burger between the potato pancakes garnished with the onion and mushrooms.

Serve with a cucumber and tomato salad.
